A Butterscotch Tart That Gets Better with Every Bite

Some desserts are enjoyable the moment they're served, while others seem to improve with every mouthful. A butterscotch tart is one of those treats. It combines a crisp pastry base with a silky butterscotch filling, creating a dessert that's rich without feeling too heavy. Add a handful of crunchy Butter toffee popcorn on top, and every bite brings a satisfying mix of smooth, sweet, and crisp textures.

Whether you're baking for a family gathering, a birthday, or simply treating yourself at the weekend, this dessert looks impressive without being overly complicated. Follow the method below to make your own.

INGREDIENTS

  • Shortcrust Pastry Tart Shop brought or Homemade

Butterscotch Filling

  • 180 grams (3/4 cup) Unsalted butter

  • 2 tbsp (30 ml) Milk (full fat is best, but any will work)

  • 180 grams (1 cup) Soft Light Brown Sugar

Mix together the below before adding to sauce to prevent lumps

  • 4 tbsp Plain Flour

  • 6 tbsp (90 ml) Milk (full fat is best, but any will work)

Optional…….. your favourite toppings?! Such as popcorn, chocolate, meringue, cream, fruit.

 

HOW TO MAKE OLD SCHOOL BUTTERSCOTCH TART?

Simply melt the butter with 30ml milk on low heat, pour in soft light brown sugar, and stir, watch as it marbles together into a caramel colour. 

Mix the remaining 90ml of milk with 4 tbsp of flour making sure to stir well, so no lumps. Slowly pour into the butterscotch mixture whilst whisking it (to prevent lumps from forming).


MAKING OWN OR USING STORE-BOUGHT PASTRY CASE FOR A TART?

We used a store-bought pastry case for this tart to make it a tad easier. Store-bought pastry tart is a quicker option, but if you are planning on making your own pastry cases, you're a true baking champion and we ALL salute you!


FINISHING THE BUTTERSCOTCH TART (AKA GET CREATIVE!!)

Pour the (still warm) butterscotch sauce into the tart case. Just pour all in the middle, it will spread out to the edges by itself!! Cover without letting anything touch the sauce (we used a microwave splash cover) Place in the fridge to set, for about 3 hours.

That’s it!, you're ready to serve!! Tastes great with whipped cream, or custard, but we're definitely using some of our MiniPop! Butter toffee popcorn and some mini Jazzies to make it extra yummy!
